I married the typical “meat and potatoes” man. He loves a good home cooked meal, refuses to eat at places like Cracker Barrel, or diners because he says that he has a wife that can cook better than any of those places, and it’s cheaper.
Well, while he can eat it every day, all day, I can only take so much steak and baked potatoes or roast beef and mashed potatoes. I could make a gourmet meal complete with a fantastic dessert and I will get a “this was good” from him. I make meatloaf and scalloped potatoes and he acts as if he has never seen food before and tells me the entire time he is shoving it in his face how good it is! That’s my husband and that is how he will always be, and I love him for that.
I’m constantly looking for ideas and recipes that will take his love for meat and potatoes and my love for anything different and blending the two. I’m also a sucker for any recipe I can throw all the ingredients in a crock pot and walk away and it is FANTASTIC once dinner comes around….
Last night I tried a recipe from Pinterest, Pesto Ranch Crock Pot Chicken, simple, 4 ingredients,crock pot does all the work, my kind of recipe! This chicken would be good paired with any potato and nice side salad. With us having potatoes all the time and my cravings this pregnancy, I decided I wanted my mom’s baked corn rather than a potato and corn is not allowed to be considered a vegetable in our house. So here goes….
4 Ingredients… chicken thighs are already in crock pot.
Dump in pesto, spread over chicken with a spoon
Sprinkle ranch packet over chicken
Pour in chicken broth
Give it a stir and let crock pot do all the work!
This is chicken was very flavorful, tender and my 2 year old INHALED it!! My husband said it would be really good served with noodles and garlic bread, but he had 3 pieces of the chicken, so I believe he liked it as well!
- 8 boneless skinless chicken thighs
- 6 ounce jar of pesto
- 1 package Ranch Dressing Seasoning Mix
- 1/2 cup chicken broth
1. Turn crock pot to high setting. Place chicken thighs, pesto, ranch dressing and chicken broth into crock pot. Stir gently to combine all seasonings. Close with lid and cook on high for 3-4 hours or on low for 6-8 hours.
2. Serve with a side of mashed potatoes (or any side) and a simple salad.
