Ham, Green Beans, and Potatoes
Growing up in a family of 9 and not a lot of money there were a many staples in our home. I know this is not the most fancy of meals and that it does not take much, but it was one of my favorites. My mother always made this meal the week after we would have a ham, she would use the bone and the meat that was left on it and the broth and let it cook for a few hours, the smell filled the house and we all knew what was for dinner that night by the scent alone, some of us excited, some not so much.
I was lucky enough to get what was left of the ham from our Easter dinner with my mother in law and decided to make this dish for dinner. It’s very simple, a little time consuming but well worth it in the end! Because all the major food groups are covered in the dish, I just paired this with a nice, crusty roll.
Everything needed to make this wonderful dish, ham bone, and broth already in the stock pot, Yukon gold potatoes cut into cubes, and I used thawed frozen green beans.
Added about 2 ½-3 cups of water to the ham and broth and allowed to cook on low heat for about 1.5 hours
As you can see after allowing it simmer, the meat just comes off the bone
Throw the meat back into the broth, and add potatoes, and I allowed the potatoes to cook for about 45 min to an hour.
I threw the green beans in about 20 min before serving so they didn’t turn to mush
Pair with a nice crusty roll and you are set!
The bread was a hit with Mia! After she tried the rest, it was gone and she asked for more!
Ham, Green Beans and Potatoes
1 ham bone with leftover meat
2 ½-3 c. water
7-8 small Yukon gold potatoes, cubed
12 oz. of frozen green beans, thawed
- Throw bone, meat, broth, and water into stock pot, allow to cook on low for 1.5-2 hours.
- Pull meat off bone, add back into broth, add potatoes, allow to cook for 45 min to 1 hour on med-low until potatoes are for tender.
- Add thawed green beans to stock pot about 20 minutes before serving to avoid over-cooking.
