If you’re looking for a quick and easy not-terrible-for-you snack, this just may be the ticket. I recently pinned a chocolate chip angel food cake recipe that looked absolutely delicious. Then I started the search for a recipe for angel food cupcakes, partially because I don’t own the pan necessary for a successful angel food cake and partially because cupcakes are much easier to feed to 6+ children. After some time, I realized all I was finding was recipes to make the cake from scratch and this busy momma doesn’t have the time (nor the desire to waste a dozen eggs just to use the whites) to make an angel food cake so, while at my monthly trip to Aldi, I grabbed an angel food cake mix figuring that was the safest bet and set off to create my own chocolate chip angel food cupcakes.
I started with making the mix as directed on the box. Very easy… well should have been but I didn’t want to ‘drag out my stand mixer’ and opted to whip the ‘egg white package’ by hand. BIG mistake. While WE (yeah, had to take turns with Hil who thankfully was here visiting or my arm would have fallen off) were eventually successful it would have been much easier and intelligent to get out the stand mixer. I highly recommend using an electric mixer for that step. Ok, moving on…
Once I had the mix ready I got 24 (yep, makes 24!!!) cupcake liners into my pans and divided it up using just about 1/4 c. of batter in each one. Then we sprinkled a few chocolate chips on the top and popped them into the oven. I had preheated it to the time stated on the box which I believe was 350. I set the timer for 15 minutes and stayed close, they were done just before my timer went off so I’d check them closer to 12 minutes to be sure they don’t burn. I let them cool and served them for ‘after school snack’ and boy were they a hit!!!!
Each child inhaled it and asked for another, and were quite upset when they were offered crackers instead. The only thing I will warn is the bottom of the cake pulled away from the liner and while they looked puffy and awesome they were shorter than they appeared. I do know an angel food cake is to cool up side down so that may have something to do with it. Just might have to experiment with it next time to see if that can be fixed. It definitely didn’t hinder the cooking or flavor they’re just smaller than they appear. Oh! I almost forgot the best part!!! Well, for some of you. 😉 Each one has only 100 calories in it INCLUDING the chocolate chips! So they’re a nice little treat even when you’re trying to be ‘good’. Enjoy!!!
Chocolate Chip Angel Food Cupcakes
1 Angel Food Box Cake Mix prepared as stated on the package
1/2 bag semi-sweet chocolate chips
1. Prepare cake mix
2. Divide into 24 cupcake liners
3. Sprinkle each with chocolate chips
4. Bake at temperature on box for 12-15 minutes (watching closely so they don’t burn)
Let cool and enjoy!
