To start this post today, I have a story; I was going to treat you all to the most amazing meat loaf recipe with a side of cheesy hashbrown potatoes, but this will not be happening. Sadly, I made a BIG mistake while making the meat loaf with my unfortunate pregnancy brain. Not only am I dealing with half a brain, but I’m also fielding every “why” and “mommy help” command from a very impatient 2 year old. Anyway, I was preparing the meatloaf according to the recipe and when the recipe called for ¾ cup of milk, I read sugar…. The result? HORRIBLE!!!! Candied meatloaf!!! I wanted to curl into a ball and cry! Not only did it screw up dinner for that evening, but I also screwed up dinner for after Baby Landon comes (I have been doubling everything and freezing to put some ease on my husband when he’s helping out!) There was an upside though…. the hashbrown potatoes were out of this world!!!
Now on to the bread… I love a good banana bread, every year a family friend would make us a few loaves for Christmas, and it was tradition that it would be Christmas morning breakfast as we played with our new toys and had a great time as a family. I believe this banana bread recipe is the greatest I have ever had, and so glad my mother was able to get it from her, because it’s a go to for me anytime I have overly ripe bananas lying around. I would usually make this into bread, but do not have any loaf pans, so therefore, I made them into muffins. While searching Pinterest I came across a recipe for banana bread with Nutella swirl and thought it sounded amazing. After looking at the recipe and it calling for Greek yogurt and flax, I decided that I would just go with my good old standby banana bread recipe and add a little Nutella to the mix…. The results….. FANTASTIC!!!
Here is all you will need for the banana bread!
First mix sugar, eggs, oil, and vanilla.
Then in a separate bowl mix flour, baking soda, and salt.
Add to wet ingredients and mix.
I then add the bananas and mix well till the bananas are all broken up throughout the mixture.
Then, in a greased muffin tin, put about a ¼ c scoop batter into each hole. Added a little Nutella then top it off with batter and swirl with a knife
Finally, I topped them with an Oatmeal Streusel I threw together because I hate a muffin top with no topping! (Recipe included below)

And there you have it!! Banana Nutella Muffins with Brown Sugar Oatmeal Streusel!! While they may not be the most healthy breakfast muffin, they sure are delicious!!! Hope you enjoy!!
Banana Bread (or Muffins)
Makes: 2 loaves or 24 muffins
Prep time: 10 min
Bake Time: 60-75 min for loaves, 15-20 min for muffins
- 1 ¼ c. oil
- 2 c. sugar
- 3 eggs
- 1 tsp. vanilla
- 3 c. flour
- 1 tsp. baking soda
- 1 tsp salt
- 5-6 ripe bananas
Preheat oven to 325 degrees if baking loaves, 350 degrees if making muffins. Beat together oil, sugar, eggs, and vanilla. Then, in separate bowl mix flour, baking soda, and salt. Add dry ingredients to wet, mix well. Then add mashed bananas. Pour into greased loaf or muffin pans, check with toothpick till it comes out clean!
- ½ c flour
- ¼ c cold butter
- ¼ c brown sugar
- ½ c. dry oatmeal (I used quick oats because that is all I had)
Throw all ingredients together in a bowl and using a fork or pastry blender, get to a streusel consistency. Top muffins, and ENJOY!!!
