Mom does it again. That’s really all there is to say! We went to her house for Sunday dinner/my brother’s birthday and she had made ‘Crazy Cake’ cupcakes with what looked like plain vanilla frosting. We couldn’t have been more wrong.
I know… again with the iPhone pics. You’d think I would have learned my lesson and start taking the ‘good’ camera to lunch on Sundays but apparently, I haven’t. Anyway, she ‘threw together’ one of the most light and delicious icing recipes I’ve ever tasted… and anyone who knows me knows I take my baked goods very seriously. Thankfully, she was able to remember what she did this time so I can share it with you!
Whipped Cream Cheese Frosting
1/2 c. butter (melted)
4oz. cream cheese (softened)
2 tsp. vanilla
3-4 c. powdered sugar
1. Beat butter and cream cheese til smooth.
2. Add vanilla and mix well.
3. Slowly add sugar until you reach a stiff but smooth consistency, usually takes 3-4 cups.
That’s it! Easy peasy and SUPER good! So, go make some type of yummy chocolate cake (or THIS one here) and top it with this deliciousness!!
