I’ve been a slacker. I had these great hopes of once I was on my delayed maternity leave I would be on top of my assigned blog posts. I failed. I decided to get our home organized and caught up on some massive amounts of deep cleaning and furniture rearranging. You know, all those things we try to crunch in on Saturday and Sundays. Factor all of that in, with a now 5 month old that decided to cut 2 of his bottom teeth and developed a love of talking in his sleep at night (I am not kidding)…my blog posts were moved to the back burner. However, no more excuses…I am here and with a recipe in hand.
This is a very simple recipe, but I do need to be honest – it is not healthy. At all. I am one that believes we try our best to eat in moderation during the holidays, but we do eat soul food…and soul food is not healthy. You can try your hand at making this more “diet friendly” if you’d like…I am going to leave it just as it is.
Simple start: Collect your necessary ingredients. Butter, corn syrup, brown sugar, condensed milk, Club Crackers, and semisweet chocolate chips.
Step 2 : line a 9×9 baking pan with aluminum foil. Use 1 tsp of butter to grease foil. **Guessing you could use spray if you wish, this is just to help the caramel not stick.
Step 3: In 9×9 pan, arrange a layer of crackers
Step 4: In a sauce pan, add can (14 oz) of condensed milk, 1/2 cup brown sugar, 2 Tbsp corn syrup, and 3/4 cup of butter together. Bring to a boil over medium heat (keep it at medium and stir a TON as to not burn). Once at a boil, reduce heat to maintain a small boil and simmer for approximately 7 minutes.
Step 5: Remove and pour 1/3 of the sauce on the Club Cracker layer. Repeat 2 more times.
Step 6: Once the top layer of caramel has been poured on, sprinkle with chocolate chips. Allow them to sit for 3-5 minutes until they look glossy.
Step 7: Once they are glossy, spread with a spatula to create a top chocolate layer
Step 8: Cover and place into refrigerator for approximately 2 hours, or until chocolate hardens.
Step 9: Remove from pan using foil, cut into desired rectangles or squares and enjoy!
Husband is at work, so I did the taste testing today. I am very please and thrilled with the ease. With the upcoming holidays and parties…if you need something quick to take – this is your ticket. Enjoy and Happy Thanksgiving to you and yours.
