Summer is officially upon us, yay! With the influx of ‘big kids’ to my daycare, I’m always looking for fun snack ideas. Lucky for me I didn’t need to look very far. A walk down memory lane reminded me of a yummy little snack that was a favorite of mine as a child, as well as the brothers, sisters, and numerous daycare kids through the years. Yeah, the credit on this one goes to the Momma. She dreamed this one up years ago and I’m sure this snack is going to be enjoyed by all these kidos now as much as it was then.
And, it couldn’t be easier…
Yep… those three things and milk is all you’ll need. To start, you’re going to make the pudding according to the directions on the box; mix the pudding with 2c. cold milk and put it in the fridge for about 5-10 minutes. Then, you take half of the Cool Whip and fold it into the pudding, don’t over mix it because the Cool Whip will get runny. Once you have a mousse consistency, take the graham crackers and start making your ‘sandwiches.’
I make a few and then wrap them in plastic wrap, freezer or parchment paper would work too.
Then you just pop them into the freezer for a bit. A few hours is best but even 30-45 minutes will usually do the trick. Once they’re frozen you have a delicious mid-afternoon snack!

Chocolate Mousse & Graham Cracker Freezer Sandwiches
1 box instant chocolate pudding
Cool Whip (you’ll use half the container)
2c. milk
Graham Crackers
~ Make the pudding according to the directions on the container and allow to set for 5-10 minutes in refrigerator.
~ Gently fold half the Cool Whip into the pudding until it is a mousse consistency.
~ Assemble ‘sandwiches’ by pudding some of the pudding mixture between two graham crackers and wrap in plastic wrap, parchment or freezer paper.
~ Place in freezer and allow to chill a minimum of 30-45 minutes, a few hours is usually best.
